Requisition Number: S_220425 Department: Housing Dining Service-1131 Description of Work: The Catering Production Manager is responsible for the supervision of the food production areas of the Catering operations in the Nebraska Union, the Nebraska East Union, and Cather Dining. Assists with the management and supervision of other areas of the University Catering. Minimum Required Qualifications: Associate's in Culinary or Food related and three (3) years of culinary/food service production experience in a high-volume commercial or non-commercial dining service operation required, equivalent education/experience considered. Ability to prepare food according to health and safety requirements; knowledge of safe food handling techniques and tools; knowledge of basic cooking techniques such as sautéing, broiling, frying and grilling, seasoning methods and portion control; and thorough understanding of the use of food service equipment. Must have a valid driver's license and meet University driver eligibility requirements. Preferred Qualifications: Bachelor's degree in a relevant food or culinary or hospitality or business field preferred. Experience with hands on production management in high -volume or non-commercial dining service operation with experience training / managing staff to implement/expand culinary skills. Experience with planning, preparation and service of special events/catered events beneficial. Food Handlers Certification preferred.Serve safe course certification or willingness to obtain certificate upon hire. HACCP training Posted Salary: $38,000/yr minimum Job Type: Full-Time
