Requisition Number: F_210162 Department: Animal Science-0830 Description of Work: The Meat Specialist leads a dynamic extension and research program providing science-based education/training and technical support for meat and poultry packers/processors, livestock producers, and allied industries across the state of Nebraska, using cutting edge knowledge of food safety, HACCP , regulatory compliance for meat and poultry operations, and meat processing (harvest, fabrication, fresh meat quality, processed meats, and sanitation).    Extension responsibilities include developing educational programs and resources to enhance meat science knowledge for livestock and meat industry personnel, and engaging stakeholder groups to ensure the extension programing addresses current and emerging industry needs, including work force development and training. The Meat Specialist's research program is relevant to the needs of the meat industry in Nebraska, supporting and advancing the extension appointment. Knowledge areas addressed include, but are not limited to, food safety and sanitation, fresh meat quality and quantity, meat processing, meat packaging, and/or palatability and consumer acceptance. The research generates peer-reviewed scholarly publications. Other responsibilities are advising and mentoring graduate students in meat science research and extension programming and obtaining and leveraging external and internal financial support (grants, fee revenue, etc.) for extension and research programs. Establishing collaboration within the University of Nebraska and with external academic, governmental, and/or industry collaborators to enhance extension and research endeavors is expected. The Extension Meat Specialist contributes to advancing the Nebraska Integrated Beef Systems mission.  The incumbent contributes to the integrated (extension, research, and teaching) land-grant mission of the Department of Animal Science and IANR , as an effective scholar and citizen, including supporting student recruitment and IANR science literacy; contributes to the departments of Animal Science and Food Science and Technology to support the teaching mission related to areas of expertise; and accepts committee assignments, reporting responsibilities, and other special ad hoc assignments requested at the administrate unit, college/division, institute, and/or university levels. Preferred Qualifications: Comprehensive knowledge of food safety, meat industry operations, and government regulatory compliance. Experience in conducting research related to meat science and the potential for the development of an externally funded research program relevant to the meat and poultry industry. Demonstrate strong communication skills and the ability to develop and deliver an engaging extension education program to meet the needs of the diverse consortium of stakeholders across the state of Nebraska.
