The PepsiCo Global Foods R&D Break Through Product Function Department enables PepsiCos commitment to meet consumer needs for a spectrum of foods/snacks across the globe. This department of innovative scientist and engineers lead breakthrough Research & Development programs that deliver innovation, productivity, & global brand stewardship to grow our established multi-billion-dollar snacks Category. With-in the department, this role is on the Baked and Thermal Process (Meal Solution) team. This role impacts the Oven Baked and Red Rock Deli brand globally, and several local brands on the Baked side of the business. The scope of brands on the Meals includes the core brands like Cheetos, Doritos and Lays, Pasta Roni, and emerging brands like OTEP on Meal Solution.

This role requires the application of fundamental food processes and scientific principles in combination with a creative mindset to develop novel product formulation. The incumbent candidate has strong technical skills to work on complex projects from local pilot scale to commercial scale across the globe. Strong collaboration skills with PepsiCo colleagues and external experts are essential. The position is in Plano, Texas (a suburb of Dallas) at Frito Lay Headquarters Research and Development Center.

Associates in this role will be expected to have the strong independent drive to identify opportunities and set the agenda/influence key partners and stakeholder management. Experience and collaboration with internal experts to develop and execute meaningful experiments will be critical to this roles success. Flexibility and willingness to embrace change will also be critical to success in this role.

Key Responsibilities:

  • Collaborate with partners in R&D Global Process function, Platform, and R&D region teams to develop consumer learning plans and prototypes to establish a 2023+ innovation pipeline.

  • Develop research plan and execute testing for Science &Technology (S&T) programs.

  • Lead or support emerging or prioritized projects across Meals and Baked.

  • Represent Product Function R&D as a strong partner in cross-functional discussions

  • Utilize scientific methods and Food process engineering to invent novel technical solutions for multi-regional deployment within PepsiCo.

  • Screen product formulation at the bench and be able to scale up the optimized formulation through Design of Experiments (DOE) at pilot scale equipment necessary to demonstrate advantages of new processes technology and create innovation possibilities.

  • Define Cost of Goods (COGS), qualify vendors, and work with the process team to scope new capital requirements, specify unit operation performance criteria, and qualify new installations at commercial scale.

  • Lead global brand stewardship to maximize the scale advantages for PepsiCos existing businesses, maintaining market leadership.

  • Lead overall project agenda including technical approach, setting timelines, and budgeting.

  • Leverage external and internal experts for key scientific, analytical, and sensory research.

  • Partner externally to source ingredients and food processing equipment and leverage vendor expertise to implement new technologies

  • Provide project updates to key R&D and cross-functional executive leadership


    Education/Certifications: BS, MS, or Ph.D. Degree in Food Science or Engineering

  • Relevant product development experience in Wet Foods, Ready to Meals highly desirable

  • Experience in Thermal Processing of foods is a plus but not mandatory

  • Strong leadership and collaboration skills

  • Independent execution of project creation and execution while aligning key internal stakeholders on progress

  • Ability to influence, collaborate and communicate both above and below the level

  • Demonstrated capability to effectively manage complex projects or multiple projects simultaneously

  • Demonstrated understanding of how to incorporate business needs into technical decisions

  • Demonstrated ability to turn line productivity and efficiency improvements into meaningful business impact

  • Ability and interest to work in the laboratory, pilot plant, and manufacturing scale environments

  • Willingness to travel up to 20%-30%.
